Your new favorite cookie recipe - You must try this!

Happy Monday! How has your weekend been and what are the prospects for the week ahead?
As usual, I am pondering my new week and I cannot believe in a few days September will be upon us. For me, it means colder and darker days ahead. not my favourite time of year, but this also means we tend to eat more energy-rich foods that help to power us through the winter which may not always be the most nutritious choice. I am hoping to help you to change that so we aren't scrambling to lose the unwanted weight when Spring comes knocking. I am very much aware that much of what we eat isn't as healthy as we would like it to be, so here is a bit of an alternative for you to try.
It may not surprise you that I am thinking of food, and today, snacks in particular. One of my favourite snacks growing up was cookies or as the British say, biscuits and back then I enjoyed snacking more than I did food. No wonder I struggled with some of the health issues I had, however, weight gain was not one of them. I get much of my inspiration from my time observing my grandmother in the kitchen. She made much of what we ate at home including all the snacks. Saturdays were her baking days and today I get a sense of comfort from baking because it reminds me of her in the kitchen whipping household favourites, hmmmm....... I could almost smell it now. I think most folks will have a memory similar to this.
So much has changed over the years in our food industry. So many varieties to choose from and most are filled with unhealthy ingredients, which has driven me over the years to prepare my own snacks and foods. I am not always successful especially when life gets busy but when I do, it doesn't last a minute with my family. As a mum and wife, what my family eats is very important to me.
I am sharing this quick and easy no-bake cookie recipe to encourage you to get back into the prepping of your own snacks. A healthier option for you and your family.
Are you a fan of no-bake cookies? I hope you are. They are soooo good! If you indulge in energy balls, this may be an option for you.
But have you ever seen the original recipe of some of these recipes? Talk about fat and sugar bombs … too much!
Not anymore … I’ve got a healthy version for you that’s a lot less sugar, and – bonus – it’s loaded with fibre and antioxidants.
PLUS (most importantly) these cookies taste DELICIOUS!🥰
NOTE: I use a little less honey when I make these, but my taste buds are used to less sugar. You can start with this amount and adjust the next time you make them (because there will be a next time!).
If you want a deep dark chocolatey cookie, use the whole 4 Tbsp in this recipe (it’s rich).
But if you want a milder taste, 3 Tbsp still delivers a chocolate punch!

Naturally Delicious No-Bake Cookies
(makes 18-20 cookies)
½ cup (165 grams) honey
¼ cup (56 grams) unrefined coconut oil (or grass-fed butter)
3-4 Tbsp cocoa powder
¼ tsp sea salt
½ cup (130 grams) natural peanut or almond butter
2 Tbsp chia seeds (optional)
¾ cup (60 grams) old-fashioned rolled oats
⅓ cup (50 grams) chopped pitted dates or prunes
Combine the honey, coconut oil, cocoa, and sea salt in a medium saucepan over medium heat. Stir until the coconut oil is melted and the mixture is thoroughly combined about 3 minutes.
Stir in the nut butter and chia seeds and cook until the nut butter is smooth and melted for another 3 minutes. Turn the heat off and stir in the oats and dates. Cover the saucepan and let stand for 5 minutes.
Scoop out the “batter” by tablespoons onto a parchment-lined baking sheet. Place in the refrigerator for at least 30 minutes so they can firm up before eating.
These should be stored in the fridge as they taste best when they are cold.
